Stovetop Cranberry Jam

This quick Stovetop Cranberry Jam is quick to assemble and even easier to prepare. Better yet it is easily paleo, gluten, and dairy free. Come back on tomorrow to learn how I used my jam 🙂

Stovetop Cranberry Jam
12 ounces fresh cranberries
1/2 cup fresh orange juice
1/2 cup coconut palm sugar
juice of two medium oranges
juice of one lemon & one lime
1/8 teaspoon nutmeg
1 teaspoon grated fresh ginger
1 tablespoon ground cinnamon
1 teaspoon pure vanilla extract

In a medium saucepan, combine cranberries, palm sugar, juices, spices, and balsamic vinegar. Bring to a boil; reduce heat to low, cover and simmer, stirring occasionally, until sauce has thickened, about 45-60 minutes. Turn off heat and allow to sit for 15 minutes undisturbed. Transfer to fridge overnight.
