What I ate today: veggie taco salad

My slow cooked pinto beans came out divine. Just the base I needed for my veggie taco salad. I cannot enjoy a taco salad without extra sharp cheddar so I had to break my “non’ dairy rule if only this once. Fresh tomato, rice, sweet corn, and scallions top off the beans with a side of tortilla chips. #YUMTaco Salad
