Has it really been a week since my last post? In between resting, fighting fatigue, IBS/nausea and running the bakery, I was low on energy and time to make a meaningful post. My Saturday worked out better than today, yesterday I carried out the three errands on my agenda pushing through the fatigue, fog, and pain. But today everything came to a head and I was rendered weak to the knees. There went Sunday’s super bowl snacks which I was looking forward to creating a Buffalo Blue Cheese pizza with Buffalo Tofu. Instead, I didn’t wake up until 4pm and spent another hour mustering up an ounce of stamina to go pick up a Bean Corn Burrito from the Mexican place up the street. I hate it when I am looking forward to a great day and the fibro monster steals it away.
No pictures for that meal but it was delicious topped with fresh lettuce, tomato, sharp cheddar, salsa and guacamole. I can already tell that this week will find me fighting through this flare while trying to bake up orders. A positive attitude and prayer will serve as my greatest weapons. I don’t expect to be able to do a whole lot of cooking this week, but promise to post a recipe at some point in the week. I have given up on Wednesday being the recipe day, but leaving it open based on my health seems to work best. Living with Fibro blog is in the middle of a redesign, I can’t wait to debut the new site and get back to my regular Fibro blogging hopefully by the beginning of next week.
