I dreamed of these last night so it was imperative that I followed my dream and whip these up as soon as I woke up. The addition of yeast, apple cider vinegar, and baking powder make these Blueberry Cakes light and fluffy with a slight sourdough taste. Topped with earth balance and pure maple syrup, these are better than I-Hop. I don’t own a griddle so I finish my pancakes in the oven; a trick I read somewhere online to get that perfect even golden brown on both sides. Low key day for me. Sweet potatoes roasting in the oven as I type to be paired with my remaining Turkey Meatballs and Sauce. I don’t eat meat much but I figure these meatballs are too good not to post the recipe. Stay tuned.
Whipping up a slew of Mini Banana Loaves tonight for an order tomorrow. The spirit is willing but the flesh is weak; body don’t fail me now!
