What I ate today: peanut butter, chocolate, and hot chicken

This week is surprisingly going very well. Positive vibes all around, baking up a storm of treats and continuing to add more fruits and protein shakes into my weekly routine. Today started off with a Peanut Butter Chocolate Protein Blast (yes, I made that up just now) I will post the recipe. Later I had a half of a grapefruit with a little Truvia. I have been on this grapefruit kick for weeks now. They are best right out of the fridge, crisp and refreshing.

I was feeling like chicken for some reason today so I followed my instinct and stopped down to my friend Cristy at Eat Well Market here in Nashville. Eat Well is a food stand/pop up restaurant on my side of town, she buys my gf sandwich loaves and banana bread and I was in the mood for something outside of my normal diet. It needed to be  battered and pan fried. She whipped me up a Hot Chicken sandwich on my very own gluten free bread. I paired it with a Tomato Cucumber Salad and dinner was served. The sandwich was all kinds of amazing and really not that unhealthy at all. I scarfed it all down so fast that I gave myself a bad case of the hiccups which are annoying the life out of me.

PS. Sorry no pics accompany this post, I have been very lazy lately.

Eat Well,

the gluten free chef
