Grilled Summer Vegetable Medley w/ Grilled Corn
4 ears fresh corn
2 yellow squash, washed and cut into wedges
2 zucchini, washed and cut into wedges
1 red bell pepper washed and cut length wide
1 white onion, cut length wise
1 pack mushrooms
1 pack of red cabbage
1. Shuck and wash corn. Set aside.
2. In a large bowl coat squash, zucchini, bell pepper, onion, and mushrooms with olive oil, salt and black pepper.
3. Prepare grill and add vegetables and corn to grilling rack. Grill vegetables 15-20 minutes turning midway through.
4. Remove vegetables from grill, plate and top with raw red cabbage and olive oil and red wine vinegar.
