The second week of June is already upon us. My oh my where does the time fly? Before you know it we will be knee deep in summer preparing for Labor Day. This week’s menu plan is simple and easy to prepare. Some of the meals are ones that I tried over this past week. I hope you enjoy these meals as much as I have. Have a wonderful week.

- Strawberry Berry Banana Chai Smoothie w/ 1/2 Cup Almonds
- Cinnamon Rice Chex, Almond Milk & Bowl of Fresh Strawberries

- Grilled Wild Caught Salmon w/Mixed Spinach Salad
Succotash of Corn, Apple and Curry Cabbage w/ Tomato Salad
Breakfast for dinner: Blueberry Pancakes w/ Vegan or Turkey Sausage
Grilled Summer Vegetable Medley & Grilled Corn
Chick peas in Spiced Curry Gravy with Crispy Tofu
Udi’s Margherita Pizza with Toss Garden Salad (pick your favorite dressing)
