I have been on a quinoa kick ever since I made Quinoa w/ Spinach and Feta . This Kale + Quinoa Bowl is simple to put together and is delicious served hot or cold.
1 cup quinoa
1 can kernel corn
1 can garbonzo beans
1/2 green tomato, diced
1/2 onion, finely diced
2 cups kale greens
2 cups vegetable broth
olive oil to coat pan
To Taste: salt, black pepper, onion powder, onion flakes
1. Coat cast iron skillet with olive oil and sauté onion, tomato and minced garlic until onions are translucent about 5-6 minutes.
2. Add dry quinoa continuing to sauté while stirring constantly, about 3-4 minutes. Add veggie broth, cover, and simmer about 15 minutes on medium heat.
3. After 15 minutes add corn and garbonzo beans. Reduce heat to low then add kale greens and cover for 5 minutes. Remove from heat and allow to sit for 5 minutes before serving.
