For the life of me I couldn’t remember what the name was? Hash browns, home fries, skillet potatoes? What ever you call them I was craving perfectly seasoned sauteed potatoes with a side of grits and I didn’t feel like going to the diner to get them. A russet potato, onions, garlic, and a few mushrooms and my breakfast for dinner was complete right in my home diner. Peep the recipe for my skillet potatoes below.
Seasoned Skillet Potatoes
1 medium potato washed and diced
1 small onion, sliced
1 cup white mushrooms, sliced
2 tablespoons minced garlic
1/2 teaspoon crushed red pepper
2 tablespoons apple cider vinegar
2 tablespoons olive oil
1 cup water
To taste: sea salt, onion and garlic powder, black pepper, paprika
- Coat a medium cast iron skillet with olive oil and bring to a medium heat. Add potatoes, onions, garlic, and mushrooms season well and brown for about 10 minutes.
- Add 1/2 cup water and vinegar. Cover and lower heat for another 15 minutes. Keep adding water 1 tbsp at a time so as to not let liquid cook out completely. Transfer skillet to oven set to low broil and crisp for an additional 10 minutes.
