Homemade Almond Milk

Keeping with our theme of almonds at the top of the year I wanted to re share my DIY almond milk recipe which I originally posted one year ago. I love almond milk and use it in all of my smoothies, cereal etc. I remember reading a few articles and cautionary tales about processed almond milk being bad for you so I went on a kick of making it myself for alittle while. That didn’t last long but I still go to this recipe every now and again when I am running low or when I just want to reduce my intake of the store bought stuff for awhile. Stay tuned for new smoothie recipes using almond milk later in the month. 🙂

Homemade Almond Milk adapted from the recipe found at Strawberry Chocolate Concoction
1 cup of raw almonds, soaked overnight
10 dates, pitted and soaked overnight
1 tablespoon cinnamon
1 teaspoon nutmeg
4 cups distilled water (not the soaking water)

(makes about 4 cups of almond milk)
1. Drain the almonds and dates. Peel the skin off of half of the almonds. Add the three ingredients to a blender and blend on high power (do this in batches if your blender can’t handle it all at once).
2. Keep blending until all of the almonds and dates have been pureed and mixed well into the liquid.
3. Strain the milk using a cheesecloth.
4. Pour the almond milk into mason jars.
Shake well before serving. Serve chilled Store in the refrigerator for 4-5 days.
