This post was inspired by a great article I found online by the Democrat and Chronicle and Life and Health Editor Tami Best. Tofu is often mentioned with stares of disgust, horror, and confusion. What is it? What do I do with it? How do I cook with it? So I thought it would be nice to compile a few of the most interesting facts the article discussed as well as share my favorite tofu recipes since it happens to be a main part of my diet.
What is Tofu?
Tofu is made by adding a salt coagulant such as nigari or calcium sulfate to soymilk.
Are there different kinds of tofu?
There are two main types of tofu, Silken and Block. Silken tofu is very smooth and does not form curds. Block comes in firm and extra firm varieties and speaks to the texture of the tofu. Firmer varieties are best for sauteing and stir frys.
Is Tofu Gluten Free?
Plain tofu should be gluten-free. Soybeans are naturally gluten free. However there can be cross contamination with the equipment used to process the soybeans at the farming level. Your best bet is to check labels and check out the list of brands that specify that their tofu is indeed gluten free by clicking HERE
What does tofu taste like?
Tofu is basically flavorless, and because it is porous, it takes on the flavors of other foods. This makes it quite versatile.
How can I use it on my cooking?
Silken tofu works best for sauces, gravies, soups, and desserts. Tofu can also be used as an egg replacer in quick bread, muffin, and cake recipes. Use 1/4 cup blended silken tofu to equal one whole egg. I also like to use it to make no bake desserts and delightful vegan chocolate mousse.
Firm tofu can replace meat or seafood in stir-fry recipes or on the grill. Marinate tofu in your favorite seasoning or dressing for additional flavor. It can also be used as a substitute for cheese, especially for vegan recipes. One tip is to press as much water out of the tofu as possible if you plan to grill, bake, fry, or marinate it. Wrap a block of tofu in a small, clean towel and place heavy objects on top of it.
