Another weekend is behind us and I am finally starting to settle into my relocation back to Upstate NY. This weekend saw me getting over the last stages of a two week long flareup. They are never fun, but i didn’t let the ache and fatigue put a damper on the gorgeous Saturday we had. The weather here on the East Coast has been inconsistent to say the least and it was back to grey and dreary skies on Sunday.
I was so busy that I ran out of time to whip up treats that featured a delicious summer fruit. But not to worry, peanut butter and chocolate are on my menu any time of the year; so a batch of Dark Chocolate Peanut Butter Brownies was in order last night.
The idea came courtesy of my sister on Friday evening when during an episode of the Barefoot Contessa (Ina swirled creamy peanut butter through her brownies) she looked at me and said you should do that with your brownies. Just like that the idea was born (I don’t know why I had never thought of this before) and my Super Fudge Brownies have officially been remixed. I use all natural peanut butter which contrast deliciously with the fudgy brownies. You can buy a copy of my Super Fudge Brownierecipe in my virtual store.
The second non-fruit peanut butter treat comes courtesy of another food blog that I frequent Alaska from Scratch. Her Peanut Butter Popcorn was just the quick and tasty snack that I needed to cap off a busy weekend. So, that was my dessert one fudge brownie and a little peanut butter popcorn.
However, my weekend wasn’t all splurges and fun. I batched some amazing raw juices for this week to ensure that I am back to healthy basics during the week.
