Green Tomato Pesto Pizza w/Udi’s Pizza Crusts|REPOST

I wasn’t kidding when I told you I whipped up all kinds of A+mazing gluten free meals using my Udi’s gift basket of products. I am up to my ears in basil and tomatoes from my garden so this meal was a no brainer. It was the perfect post water aerobics dinner. Simple, quick, and delicious.  I’ve already shared an awesome pesto recipe from Dishing up the Dirt so all you need are your Udi’s pizza crusts, one green tomato, and romano cheese if you like and your pizza will be ready in 30 minutes or less.

1 Udi’s Pizza Crust

1/2 cup pesto

1 small green tomato, sliced thin

1 tbsp. minced garlic

1/4 cup romano cheese (optional)

1/3 cup parmasean cheese, (optional)

1/2 cup fresh basil leaves

olive oil for drizzle

Directions

1.Pre-heat oven to 400 degrees. Coat one side of pizza crust with olive oil.

2. Spread a thin layer of minced garlic over crust.  Then spread a thin layer pesto.

3. Top with sliced green tomatoes, cheeses and fresh basil. You can also add other toppings if you like.

4. Bake pizza for 25 minutes or until golden and slightly crispy.
