I wasn’t exaggerating when I said I’ve been on a buffalo+bleu cheese kick as of late. This Grilled Buffalo Bleu Cheese Tofu Sandwich is the latest addition to the craze. I served mine with crispy kale chips. Check out the recipe below.
Grilled Buffalo Bleu Cheese Tofu Sandwich
3 1/2 inch slices extra firm tofu
1/4 granny smith apple, sliced thin
1/2 small onion, sliced thin
2 celery stalks, diced
2 tablespoons Marie’s chunky bleu cheese
3 tablespoons gluten free buffalo wing sauce
olive oil, to coat skillets
2 slices Udi’s gluten free whole grain bread
To taste: salt, black pepper, onion flakes
1. In a medium cast iron skillet sauté apple slices, celery, and onions over medium heat until browned about 7-10 minutes. Set aside.
2. In a second skillet heat about 3 tablespoons olive oil to a frying temperature. Season tofu then pan fry tofu slices about 7 minutes on each side until browned and crisp. Remove from heat. Toast bread then layer one half with bleu cheese, then tofu slices. Toss apple sauté with buffalo wing sauce and place on top of tofu. Serve sandwich with kale chips or potato chips
