I’ve been searching for the perfect gluten free pound cake for over two years now and by Golly I do believe I’ve found it. This pound cake is A+mazing and the toasted coconut folded into the batter simply elevates it to level supreme. You know coconut is one of my favorite ingredients to bake with and I’ll find a way to add it to just about anything. If you are looking for a light, moist, and sublime pound cake this recipe is it.
