Twelve Days of Gluten Free Cookies: Flourless Granola Cookies (Day 2)

Granola Cookies

I created this recipe when my money was low and I was looking for a cheap sweet fix. At the time I was gluten free on a shoestring budget and had no money for fancy expensive gluten free flours. These granola cookies were born. I took to my pantry and pulled out literally what I had on hand. These flour free oatmeal cookies are my take on the classic oatmeal raisin cookie. The main ingredients are gluten free rolled oats, golden raisins, coconut, and chocolate chips. The rest as they say is history and I make these cookies frequently mainly because they are so quick and easy to prepare. You can never go wrong with oatmeal as far as I’m concerned so I hope you like these as much as I do.
