I’ve had a poppy seed inspired dressing on my “recipe to create” index for quite some time. A burst of creative inspiration to create a chopped salad was all I needed to take this recipe from thought to reality. I couldn’t help but weave my latest flavor obsession of roasted strawberries into the equation. Roasting the berries concentrates the sugar giving a lightly sweetened but savory balance of salty, sweet, and tart flavor profiles.
Strawberry Poppy Seed Vinaigrette
1/2 cup roasted strawberries
1/3 cup dark brown sugar
2 tablespoons raspberry vinegar
1 tablespoon apple vinegar
2 tablespoons yellow mustard
1 teaspoon salt
3 tablespoons extra virgin olive oil
1 tablespoon poppy seeds
In a blender or food processor combine, roasted strawberries, brown sugar, vinegars, salt, and mustard. Process for 30 seconds. With blender or food processor on high, gradually add oil in a slow, steady stream. Stir in poppy seeds.
