Chai Spice Cinnamon Sugar Apple Fritter Muffins

These A+mazing Chai Spice Cinnamon Sugar Apple Fritter Muffins have been a long time in the making. I’m always looking for interesting ways to take the basics and transform them into something great. When Glutino challenged the blogger team to transform its Gluten Free Pantry Muffin Mix into an awesome dessert I immediately thought apples. Naturally since my love of apples is unparallelled. I thought why not combine the best parts of an apple fritter (gooey center) with the classic moist sugar muffin. Need I say more? This recipe has a few steps but overall it is simple to recreate and oh so worth it. These muffins are simply the best.

Chai Spice Cinnamon Sugar Apple Fritter Muffins
1 bag Glutino Muffin Mix
6 tablespoons butter or earth balance
1/3 cup unsweetened applesauce
2 eggs
1 cup rice or almond milk

Apple Fritter Filling
2 Granny Smith Apples, finely diced
3 tablespoons butter or earth balance
3 tablespoons water
2 teaspoons vanilla
1 tablespoon lemon juice
2 tablespoons cane sugar
2 tablespoons brown sugar
1 tablespoon cinnamon
1 tablespoon chai spice
1 teaspoon ginger

Cinnamon Sugar
1/3 cup cane sugar
3 tablespoons cinnamon
1. Blend in a small bowl with a lid. Set aside

Apple Fritter Filling
In a cast iron skillet melt melt butter over medium heat. Add apples, water, vanilla, lemon juice, cane sugar, brown sugar, cinnamon, ginger, and chai spice.  Sauté on low heat until apples are tender, about 7-8  minutes. Reduce heat to low. Turn off heat and allow to sit an additional 1 minute.

Muffins: Prepare according to package directions, folding in (1/3 cup) unsweetened applesauce. Line a (12 count) muffin tin with muffin liners.

Spoon 2 tablespoons of muffin batter into cups. Sprinkle each with enough cinnamon sugar mixture to cover.
Top with 2 teaspoons apple fritter mixture.
Cover each muffin cup with remaining muffin mixture to fill muffin cups.
Bake 18 minutes

Makes 12-14 muffins
